I have read that coconut sugar is low in glycemic index and can be used by people who have diabetes? Any thought about it?

I would be very cautious.  Use your meter to see how it affects your blood glucose.  This sounds too close to high fructose corn syrup which has a glycemic index of 19, but does horrible things to your blood glucose levels.  Use your blood glucose testing results to be sure.
