There are lots of yummy recipes there but what comes to mind is that they are based on somewhat expensive ingredients and on elaborate preparations. I've spoken with a few people who have tried low carb/vegetarian diets and they found it extremely challenging if they were on a budget. In order to get enough calories the trade off was usually going high carb. Not to say that vegan/vegetarian and controlled carb is not possible, but anyone attempting it should know that it is challenging in terms of finding the time go locate proper ingredients, prepare the meals and budget for those ingredients. An alternative that seems to be more workable for a lot of diabetics is a heart healthy low fat diet combined with low GI carbs, as in the mediterranean diet.

I have movd toward Vegan for years but like seafood......by having lots of veggies and fruits and nuts and seeds in the fridge...eggs and I use olive oil..make my own salad dressing from a wide variety of vingers or fresh citrus... bererries..yogurt and tofu..I just do what I call ASSEMBLAGE.....

I am certainly on a budget....I do not cook all that much and rarely follow a recipe...I just throw stuff together ..I get variety and go by color and shape and make some really creative salads..soups etc..I read food magazines..get ideas but..oatmeal with berries, yogurt with berries or eggs are usual AM foods..then salad and fruit and some cheese..a bit of seafood. I have no real schedule...but I get up early to swim so..long day..a few snacks throughout...I use a lot of Asian veggies..bok choy..cabbage....greens...etc...

I just BUY what is fresh and go from there...So..a hybrid of Vegetarian and Mediterranean....works for me. I enjoy a few cooking shows...too!

I recently photographed a totally VEGAN wedding in Austin..and I must say..the CAKE was FANTASTIC.....But....I am too lazy to bake.  The variety of SALADS at the buffet......FANTASTIC....creative.... colorful and healthful. Takes a bit of slicing and chopping but...starting with a sharp knife...and fresh ingredients.....you cannot go wrong. 

I only get into trouble  when I go past the local French bakery...BREAD seems to trip me up...one slice is never enough...

I was way off track for a few weeks but..back to normalcy now!
