    My understanding is this: There are 3 types of carbs...starch, sugar and fiber...and TOTAL carb is the sum total of all these. This is what anyone watching carbs should be counting. Also if something has 5 gms or more of fiber, this can be subtracted from the total carbs number. This is what I learned...
